Quick Strawberry & Chia Seed Jam


450g strawberries
1½ tbs fresh lemon juice
1½ tbs chia seeds
1 tbs honey

  • Hull and chop the strawberries
  • Place them in a small bowl and mash coarsely using a fork or pastry blend ( I use blender)
  • Stir in the fresh lemon juice, chia seeds and the honey until mixed together.
  • Cover strawberry mixture & chill for 45 minutes, until the jam is set. Keep jam chilled and use within 2 weeks.
